Sirene Po Shopski (Cheese Shopski Style)

Traditional bulgarian cheese dish 
Sirene Po Shopski is my favorite Bulgarian dish. Why? Because Eggs and Cheese are my favorite things. And it is super simple to make with only a few ingredients. However, you will need a small earthenware pot and lid called a Gyuveche. This recipe is for one pot, so increase the amount as you need. To make this delicious Eastern European dish you will need:

Ingredients


·         1 Large Tomato

·         Sirene ( A white brine cheese that is made from goat’s, cow, or sheep's milk) – Feta is a good alternative. 150 grams is an ideal amount

·         1 Egg

·         1 Whole Chili

·         Olive Oil

That’s it. So simple yet so delicious, especially in the summer when fresh tomatoes are available. Preparing and cooking is even easier.

Let's Cook!


1.    Preheat your oven to 180°C or 350°F.

2.    Run some oil inside your pot to stop everything from sticking.

3.    Slice your tomato and your cheese. Slice, don’t dice – we want to be able to make layers.

4.    Layer tomato, cheese, tomato, cheese, and keep going until your pot is nearly full.

5.    Place the lid on your pot and put it in your preheated oven for about 20 minutes.

6.    Once the 20 minutes is up, take the pot out and crack your egg on to the top. Add the chili along with any additional toppings: black pepper, paprika, oregano, etc.

7.    Put the lid back on and put the pot back in the oven for 5-10 minutes until the egg is cooked how you like. 

8.    Once done, take the pot out and let cool for 4-5 minutes. The pot is super hot, so be careful.

And there you have it. Sirene Po Shopski. Cheese, Tomato, and Egg. Yum!
